Garlic Shrimp Alfredo Pasta

  • 1 lb 450 g large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes optional
  • For the Alfredo Sauce:
  • 3 tablespoons unsalted butter
  • 1 cup 240 ml heavy cream
  • 1 cup 100 g freshly grated Parmesan cheese
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of nutmeg optional, for depth
  • For the Pasta:
  • 12 oz 340 g fettuccine or linguine
  • 2 tablespoons chopped parsley for garnish

Method
 

  1. Directions
  2. Cook the Pasta
  3. Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.
  4. Sauté the Shrimp
  5. In a large skillet, heat olive oil over medium-high heat. Add garlic and sauté 30 seconds until fragrant. Add shrimp, salt, pepper, and red pepper flakes. Cook 2–3 minutes per side until pink and opaque. Transfer to a plate and set aside.
  6. Make the Alfredo Sauce
  7. In the same skillet, reduce heat to medium. Melt butter, then add garlic and cook for 30 seconds. Pour in heavy cream and stir gently until slightly thickened (about 2–3 minutes). Gradually whisk in Parmesan until smooth and creamy.
  8. Combine Everything
  9. Add the cooked pasta to the sauce, tossing to coat. If the sauce seems too thick, add a splash of reserved pasta water.
  10. Add the Shrimp
  11. Return shrimp to the skillet, stirring gently to coat in the sauce and heat through.
  12. Serve & Garnish
  13. Plate immediately, sprinkling with chopped parsley and extra Parmesan.

Notes

Chef’s Tip
• For a lighter version, use half-and-half instead of heavy cream.
• To make Garlic Chicken Alfredo, substitute the shrimp with 2 grilled chicken breasts, sliced thin.
• Add steamed broccoli or sautéed mushrooms for extra texture and color.
