Cheesy One-Pot Taco Pasta

  • For the Base:
  • 1 tablespoon olive oil
  • 1 lb 450 g ground beef (or ground turkey or chicken)
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tablespoons homemade*
  • 1 10 oz / 284 g can Rotel diced tomatoes with green chiles (undrained)
  • 2 cups 480 ml beef broth (or chicken broth)
  • 8 oz 225 g uncooked short pasta (elbow, shells, or rotini)
  • For Creaminess & Cheese:
  • ½ cup 120 ml sour cream or cream cheese
  • 1 ½ cups 150 g shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste
  • For Garnish:
  • Diced tomatoes or jalapeños
  • Chopped green onions or cilantro
  • Crushed tortilla chips

Method
 

  1. Directions
  2. Cook the Meat
  3. In a large skillet or deep pan, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat if needed.
  4. Add Aromatics & Seasoning
  5. Stir in onion and garlic, cooking 2–3 minutes until fragrant. Add taco seasoning and stir to coat the meat evenly.
  6. Add Liquids & Pasta
  7. Pour in Rotel tomatoes (with juice), broth, and uncooked pasta. Stir to combine and bring to a boil.
  8. Simmer Until Tender
  9. Reduce heat to low, cover, and simmer 10–12 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
  10. Make It Creamy
  11. Stir in sour cream (or cream cheese) and shredded cheese until melted and smooth. Adjust seasoning with salt and pepper.
  12. Serve
  13. Spoon into bowls and top with chopped green onions, cilantro, or crushed tortilla chips for crunch.

Notes

Chef’s Tip
• Homemade taco seasoning: mix 1 tbsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp oregano, ¼ tsp cayenne, and salt to taste.
• Add black beans or corn for extra heartiness.
For a spicy version, use Pepper Jack cheese or stir in a spoonful of chipotle sauce.
Leftovers make an amazing filling for burritos or stuffed peppers.
