Cheesy One-Pot Taco Pasta

- Directions
- Cook the Meat
- In a large skillet or deep pan, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat if needed.
- Add Aromatics & Seasoning
- Stir in onion and garlic, cooking 2–3 minutes until fragrant. Add taco seasoning and stir to coat the meat evenly.
- Add Liquids & Pasta
- Pour in Rotel tomatoes (with juice), broth, and uncooked pasta. Stir to combine and bring to a boil.
- Simmer Until Tender
- Reduce heat to low, cover, and simmer 10–12 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
- Make It Creamy
- Stir in sour cream (or cream cheese) and shredded cheese until melted and smooth. Adjust seasoning with salt and pepper.
- Serve
- Spoon into bowls and top with chopped green onions, cilantro, or crushed tortilla chips for crunch.

Chef’s Tip
• Homemade taco seasoning: mix 1 tbsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp oregano, ¼ tsp cayenne, and salt to taste.
• Add black beans or corn for extra heartiness. For a spicy version, use Pepper Jack cheese or stir in a spoonful of chipotle sauce. Leftovers make an amazing filling for burritos or stuffed peppers.
