  • 8 slices thick-cut brioche or challah bread
  • 2 tablespoons butter for the pan
  • Crushed Biscoff cookies for topping
  • Extra Biscoff spread or caramel drizzle optional

  2. Make the Filling
  3. In a small bowl, mix Biscoff spread, cream cheese, and powdered sugar until smooth. This creates a luscious, spreadable filling.
  4. Prepare the Bread
  5. Spread about 1 tablespoon of filling on one slice of bread and top with another slice to make a “sandwich.” Repeat until all bread is used.
  6. Make the Batter
  7. In a shallow dish, whisk together eggs, milk, cream, vanilla, cinnamon, and salt until well blended.
  8. Dip the Sandwiches
  9. Dip each stuffed sandwich into the batter, soaking for 5–7 seconds per side. Let any excess drip off.
  10. Cook the French Toast
  11. Heat a large skillet or griddle over medium heat. Melt butter, then cook each sandwich 2–3 minutes per side, until golden brown and crisp on the outside.
  12. Serve & Garnish
  13. Slice diagonally and serve warm. Top with a drizzle of warmed Biscoff spread, a sprinkle of crushed cookies, and (if desired) a dusting of powdered sugar.

Notes

Chef’s Tip
• For extra indulgence, add a few banana slices to the filling before closing the sandwich.
• To make a “Biscoff Latte French Toast”, serve with whipped cream and a dusting of espresso powder on top.
• The filling can be made ahead and refrigerated for up to 3 days.
