Marry Me Chicken (Creamy Sun-Dried Tomato Parmesan Sauce)

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • For the Sauce:
  • 3 cloves garlic minced
  • ¾ cup 180 ml chicken broth
  • 1 cup 240 ml heavy cream
  • ½ cup 50 g grated Parmesan cheese
  • ½ cup 80 g chopped sun-dried tomatoes (oil-packed, drained)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes optional
  • 2 tablespoons chopped fresh basil or parsley

Method

  2. Season and Sear the Chicken
  3. Pat chicken dry and season both sides with salt, pepper, and paprika.
  4. Heat olive oil and butter in a large skillet over medium-high heat.
  5. Sear chicken 5–6 minutes per side, until golden and cooked through (165°F / 74°C internal temperature). Remove from skillet and set aside.
  6. Make the Sauce Base
  7. In the same skillet, reduce heat to medium. Add garlic and sauté 30 seconds until fragrant.
  8. Deglaze and Simmer
  9. Pour in chicken broth, scraping up any browned bits. Add heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  10. Stir gently and simmer for 3–4 minutes, until thickened slightly.
  11. Combine Everything
  12. Return chicken to the skillet, spooning sauce over each piece. Simmer another 2–3 minutes to heat through.
  13. Serve
  14. Garnish with fresh basil and extra Parmesan. Serve immediately over pasta, mashed potatoes, or rice.

Notes

Chef’s Tip
• For added depth, stir in 1 teaspoon Dijon mustard or a squeeze of lemon juice.
• Substitute pork chops or shrimp for the chicken — the sauce pairs beautifully.
• Make it a baked dish by transferring to an oven-safe skillet and baking at 375°F (190°C) for 10–15 minutes.
• Leftovers taste even better the next day — the sauce thickens and intensifies in flavor.
