Stuffed French Toast with Cream Cheese & Berries

  • 4 oz 115 g cream cheese, softened
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup 75 g sliced strawberries or mixed berries
  • For the Batter:
  • 4 large eggs
  • ¾ cup 180 ml milk or half-and-half
  • 2 tablespoons heavy cream optional for richness
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • For Assembly:
  • 8 slices brioche or challah bread thick-cut
  • 2 tablespoons butter for cooking
  • Powdered sugar maple syrup, and berries — for serving

Method

  2. Make the Filling
  3. In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the sliced berries.
  4. Prepare the Bread
  5. Spread about 2 tablespoons of the filling on one slice of bread, then top with another slice to make a sandwich. Repeat with remaining slices.
  6. Mix the Batter
  7. In a shallow dish, whisk together eggs, milk, cream, vanilla, cinnamon, and salt until well combined.
  8. Preheat the Pan
  9. Heat a large skillet or griddle over medium heat and add a little butter to coat the surface.
  10. Dip & Cook
  11. Dip each “sandwich” into the egg mixture, soaking for about 5 seconds per side. Cook 2–3 minutes per side until golden brown and crisp.
  12. Serve
  13. Cut diagonally and serve warm with powdered sugar, maple syrup, and extra fresh berries on top.

Chef’s Tip
• For flavored variations, try these delicious twists:
🍫 Chocolate Hazelnut: Replace the cream cheese with Nutella and add sliced bananas.
 🍎 Apple Cinnamon: Fill with sautéed apples, brown sugar, and a dash of cinnamon.
 🍋 Lemon Cheesecake: Mix lemon zest into the cream cheese and top with blueberries.
