Viral Caramel-Swirl Banana Bread

  • For the Batter:
  • 3 large ripe bananas the spottier, the better
  • ½ cup 115 g unsalted butter, melted
  • ¾ cup 150 g brown sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups 190 g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup 120 ml sour cream or Greek yogurt
  • For the Swirl & Topping:
  • ½ cup 90 g semi-sweet chocolate chips or chunks
  • 2 tablespoons cocoa powder
  • 2 tablespoons brown sugar
  • 1 tablespoon melted butter
  • 1 tablespoon milk or cream
  • 1 tablespoon coarse sugar for topping

Method

  2. Preheat the Oven
  3. Set to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper, leaving an overhang for easy removal.
  4. Mash Bananas & Mix Wet Ingredients
  5. In a large bowl, mash the bananas until mostly smooth. Stir in melted butter, brown sugar, eggs, vanilla, and sour cream until combined.
  6. Add Dry Ingredients
  7. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gently fold into the wet mixture until just combined — don’t overmix.
  8. Make the Chocolate Swirl
  9. In a small bowl, mix chocolate chips, cocoa powder, brown sugar, melted butter, and milk until you have a thick, glossy paste.
  10. Layer & Swirl
  11. Pour half of the banana batter into the pan. Add spoonfuls of the chocolate swirl mixture and gently swirl with a knife. Repeat with the remaining batter and swirl again lightly.
  12. Top & Bake
  13. Sprinkle coarse sugar over the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are perfect).
  14. Cool & Serve
  15. Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice once fully cooled for the cleanest swirls.

Notes

Chef’s Tip
For a bakery-style finish, drizzle melted chocolate or caramel sauce over the cooled loaf. You can also fold chopped toasted pecans or walnuts into the chocolate swirl for texture.
